When the colour of the olives turns from green to pink and purple, we choose to harvest, which gives a very light yellow-green oil with a fantastic smell of flowers and a rich fruity and spicy taste.
As a biologist and master of farming I took over the olive oil production of our small family business on Crete Island/ Greece. I am working on the optimization of all production steps. The outcome is a superior olive oil of highest quality, rich in fruity and spicy flavours.
