Full of personality and intensity, it is characterised by pronounced bitterness and spiciness, complemented by elegant notes of green almond, creating a bold and expressive sensory profile.

At the end of the 18th century, during the reign of Carlos IV, Villarejo de Salvanés became home to one of the most modern olive mills in Europe and, today, one of the oldest in the Madrid region. Promoted by the Duke of Palma, one of the last commanders of the Encomienda Mayor de Castilla, the mill was established due to the town’s strategic importance and its leading role in the region.
Completed and partially operational by 1798, the mill was built according to an advanced architectural and technical project that was praised by 19th-century scholars for decades. Throughout its history, the building also served as a theatre and as a “Pósito” — a municipal grain store that supported local farmers during times of scarcity.
