The organic extra virgin olive oil “Il Cavallino” is produced exclusively from olives grown according to the principles of organic farming, which excludes the use of pesticides, herbicides, and synthetic fertilizers and aims to increase the organic fertility of the soil.
This is Romina Salvadori. With the indispensable help of my family, I produce extra-virgin olive oil in Bibbona, on the magnificent Tuscan coast, south of Livorno. We, the Salvadori family, have made extra-virgin olive oil our way of life—our way of conceiving life and its rhythms—even before we considered it a job. And we could only make extra-virgin olive oil in an area with centuries-old olive-growing traditions.
