Lastovka olive oil is a high‑quality extra virgin oil made from an indigenous Dalmatian olive variety known for its rich aromas and distinctive, yet balanced bitter taste. It comes mainly from the islands of Lastovo, Korčula and other parts of central and southern Dalmatia, where the Lastovka cultivar is appreciated for its high oil yield and good drought tolerance. The oil typically has a pronounced vegetal, herbaceous character with clear bitterness and a gentle peppery finish, reflecting its high content of antioxidants and polyphenols.
