ORO represents one of the lines presented by the company. It is a blend of potentially D.o.p. Umbria colli assisi Spoleto olives. The olives are harvested entirely in 7-10 days between 15 and 30 October each year. They are pressed daily within a maximum of 4 hours after harvesting using a Pieralisi Leopard 6 continuous cycle mill with the addition of ultrasound to considerably reduce processing time and oxidative stress on the paste. It is always filtered the next day and stored in dedicated ARGON gas silos that preserve its characteristics with respect to contact with oxygen.

For centuries, our land has nurtured a flourishing expanse of olive trees that overlooks the splendid Umbrian plain, enclosed and protected on the left by the historical and artistic beauty of aSSISI and on the right by the Roman colony of Spello.
