Phil Organic Olive Oil captures the true essence of the Koroneiki olive variety, one of Greece’s most prized cultivars. The olives are hand-harvested early, from the beginning of October, ensuring a fresh, vibrant, and nutritionally rich extra virgin olive oil. This early harvest approach not only enhances quality but also allows the olive trees sufficient time to naturally regenerate for the following season. Pure, balanced, and authentic, Phil Organic Olive Oil reflects both respect for nature and a commitment to sustainable, high-quality production.
The harvest season starts very early, around the beginning of October. We pay particular attention to the harvest to ensure that both the trees and olives are treated with care. Our sacks containing harvested olives reach the oil mill within 12 hours. The juice from green, ripe olives is extracted at a temperature below 27°C, yielding an olive oil with distinct aromas and flavours, rich in polyphenols and other healthy nutrients.
The fresh olive oil is stored in stainless-steel tanks continuously supplied with nitrogen gas. We conduct regular tests to ensure our olive oil remains of the highest quality.
