Extra virgin olive oil presents an intense green fruitiness with aromas of green almond skin, green banana, freshly cut grass, and olive leaf. Remarkably fresh, complex, and harmonious, it is characterised by pronounced bitterness and spiciness, resulting in a long, persistent finish.
In the northeastern region of Portugal, in Trás-os-Montes, nature has created a unique landscape surrounded by mountains, where hills and small valleys are almost entirely covered with olive trees.
The region’s climatic conditions—cold winters, hot summers, an average altitude of 400 meters, and rich soils—define the authentic terroir of this protected designation area.
These exceptional natural conditions allow local olive growers to cultivate olives of superior quality while preserving a heritage passed down through generations. The traditional olive groves have been carefully maintained with deep respect for the land, using sustainable agricultural practices that remain faithful to ancestral methods.
Harvested at the ideal moment and transported quickly to the mill, the olives are immediately cold-extracted using only the first extraction process, minimizing intervention and preserving the purity of the fruit.
