Our olive oil has a flavor characterized by a herbaceous fruity note, thanks to the early harvest of the Canino olives, with hints of slight spiciness and bitterness due to the high quantity of polyphenols.
The family run San Bartolomeo Farm was founded in the 90’s by Silvio Marsan . It produces organic extra virgin olive oil and eggs , also breeds chicken , turkeys and rabbits . Our olive grove and chickens perfectly coexist. The chickens enjoy the shade and protection of the olive trees and contribute to their fertilisation. The olives are harvested at the right point of ripeness and immediately moved to our onsite mill. The oil that is extracted has a very low degree of acidity and peroxides.
