The 100% Extra virgin olive oil obtained through cold extraction from green olives harvested 12 hours before the milling process. An oil with a medium intense fruitiness, slightly bitter and spicy with aromatic notes of freshly cut grass, green tomato, hints of artichoke and fruity aromas of apple. On the palate, bitter, spicy and astringent are mild with notes of sweetness. The after-olfactory sensations confirm the herbaceous, fruity, fresh olive and floral aromas. Its moderately intense flavor makes it versatile and allows for a wide variety of uses in cooking, ideal for dressing vegetables, raw and cooked, and complementing hot dishes or fish-based dishes.
The Società Agricola Sandalia was born from a first nucleus of small family olive groves in San Sperate. Today a museum city rich in art, it is located in an area of great historical importance and agricultural tradition, already inhabited in the Nuragic era and which became a nerve center for trade in Roman times thanks to its strategic position on the road that connected Karalis with Tharros.
In 2018, driven by the passion for a world of which we have always been part since we were children, the company grew and developed until it reached the current extent of approximately three hectares of agricultural land, where we take care of our olive grove with about a thousand plants.
