Santo Roots EVOO is crafted exclusively from single-variety Koroneiki olives, sourced from local producers on Santorini island. Cold-extracted and bottled at our own mill on the island, this olive oil reflects the volcanic terroir and millennia-old olive-growing heritage of Santorini. Its production preserves the traditional methods of the island while delivering a premium, characterful olive oil with a rich profile.
The Union of Santorini Cooperatives, was founded in 1911 as the “Santorini Vine and Wine Protection Fund” and was restructured into its current form in 1947.
It is the largest cooperative on the island, representing 1,200 local growers.
The cooperative’s mission focuses on collective strength, quality, authenticity, and sustainable development, with the aim of preserving the island’s unique wine & olive oil and agricultural heritage and producing high-quality products. The cooperative is dedicated to cultivating and promoting indigenous grape varieties and olives, as well as local and P.D.O. products, which are deeply rooted in Santorini’s volcanic terroir and history.
