Talos Extra Virgin Olive Oil is a premium monovarietal olive oil produced from the Koroneiki variety on the biodynamic farm of Peskesi Restaurant in Charaso, Crete. Cultivated according to the principles of organic and regenerative agriculture, this single-estate olive oil is early-harvested, milled within 2 hours of collection, and cold-pressed in a two-phase mill. This meticulous process preserves its high phenolic content and fresh, fruity character. Talos takes its name from the mythical bronze giant given by Zeus to King Minos to protect Crete—symbolising strength, purity, and guardianship. Talos is the guardian of Crete, expressed in every drop of this exceptional olive oil.
Peskesi Restaurant has been dedicated to reviving authentic Cretan gastronomy since 2014, producing healthy, nutritionally rich products with deep respect for people and the environment.
Guided by the philosophy of “Farm to Table” and “Table to Farm”, Peskesi cultivates its 24-hectare farm using certified organic, biodynamic, ecological, and seasonal farming practices, ensuring sustainability and authenticity at every stage.
In 2025, Peskesi was honoured as the Best Organic Restaurant in Europe at the EU Organic Awards, recognising its commitment to excellence, innovation, and the preservation of traditional Cretan culinary heritage.
