For our family, olive harvesting is not merely an agricultural task – it is a deeply rooted family tradition passed down through three generations. Tholos Evvo was founded in 2025 by Panagiotis Vardakas, with the vision of bridging the past and the future by blending the wisdom of tradition with the power of innovation.
With respect for the natural environment and a love for olive cultivation, we implement the most modern and sustainable production methods, while preserving the authenticity and rich flavor heritage of the Greek land. In doing so, we create a contemporary interpretation of ancient Greek gastronomy, offering not just a product, but an experience.
