Il Cavallino – Special Edition
Il Cavallino’s extra virgin olive oil, is the combination of territory, tradition, expertise, and passion that animates us Salvadori, in the ancient art of oil making. Harvesting is done manually in October and November and the olives are pressed within 3 hours of picking.
I am Romina Salvadori and with the indispensable help of my family I produce extra virgin olive oil in Bibbona, on the magnificent Tuscan coast south of Livorno. We, the Salvadori family, have made extra virgin olive oil our way of life, our way of conceiving life and its rhythms, even before we considered it our job. And we could only make Extra Virgin Olive Oil in an area that has centuries-old traditions in olive growing.
